Turkey Chilli Loaded Sweet Potato

I used to think meals like this were too carby. It's really about how you build the plate.

Sweet potato gets a big helping of lean turkey mince, beans, veg and a little cheese, so there's plenty of protein, fibre and fat to slow things down. Comfort food, just balanced.

Why it works

No scales needed. Measurements are here if you want them, but it’s often easier to watch the reel, judge it by eye and have a go. Just keep the protein, fat and fibre on the plate.

Swap it

  • Turkey mince → 5% beef mince. Same protein, a little more fat.
  • Kidney beans → black beans or pinto beans.
  • Greek yoghurt → cottage cheese or soured cream.

Method

  1. Halve the sweet potato lengthways and par-boil for about 10 minutes, until just tender.
  2. Finish in the air fryer or oven at 200°C for 15 to 20 minutes, until the edges caramelise.
  3. Meanwhile, fry the onion and pepper in the oil, add the turkey mince and spices, and cook until browned.
  4. Add the tomatoes, beans and sweetcorn, and simmer for 5 minutes until the tomatoes soften.
  5. Spread the yoghurt over the sweet potato, pile on the chilli and finish with the cheddar.
