Creamy Butter Beans & Poached Eggs
Butter beans are one of the most underrated foods nutritionally: high fibre, plant protein, slow-digesting carbs and loaded with minerals.

No scales needed. Measurements are here if you want them, but it’s often easier to watch the reel, judge it by eye and have a go. Just keep the protein, fat and fibre on the plate.

Swap it
- Butter beans → cannellini or haricot beans. Very similar carbs, fibre and GI.
- 30g cheddar → 20g parmesan. Similar protein, slightly fewer calories.
Method
- Warm the olive oil in a pan over a medium heat. Add the paprika and oregano and stir for 30 seconds.
- Add the beans, soy sauce and a splash of water. Simmer for 4–5 minutes, crushing a few beans to make it creamy.
- Stir through the cheddar until melted.
- Meanwhile, poach the eggs in gently simmering water for about 3 minutes.
- Spoon the beans into a bowl, top with the eggs and finish with crispy onions.
